The BEST Sugar Cookie Recipe

Christmas is fast approaching and that can only mean one thing, cookies! My family always has plenty of cookies on hand, from my sisters famous chocolate chip to my absolute favorite… sugar cookies. My mom’s rich roll cookie recipe has been used to make this delicious Christmas treat since I can remember!

These cookies are the perfect combination of everything, not hard, but not super soft, sweet but not sweet enough to hurt your teeth. And the royal icing is so easy to make and hardens to the most delicious topping. Believe me, after making these cookies once, they will easily become a favorite part of your family traditions.


Rich Roll Cookies

For Cookies:

  • 1 c. Softened unsalted butter
  • ⅔ c. Sugar
  • 1 Egg
  • 1 t. Vanilla extract
  • 2 ½ c. Flour
  • ½ t. Salt

For Icing:

  • 1 c. Powdered sugar
  • 2 T. Milk (can substitute dairy milk with any nut or oat milk)
  • 1 t. Vanilla extract
  • Food coloring of your choice


  • Combine butter and sugar, beat until creamed
  • Beat in egg and vanilla
  • Combine dry ingredients in a separate bowl
  • Slowly add in dry ingredients to wet and combine
  • Cover dough with plastic wrap and chill in the fridge for 3-4 hours (or more)
  • When the dough is chilled, Preheat oven to 350°
  • Knead the dough and roll out ¼ “ – ½ “ thick
  • Cut out with your favorite cookie cutters
  • Bake at 350° for 8-10 minutes
  • Let cool
  • To make the icing, mix powdered sugar, vanilla, and milk into a bowl until well combined and smooth
  • Add in food coloring and mix until the desired color is achieved
  • Continue making frosting until you have all the colors you want!
  • Decorate your cookies
  • Have fun, there are no rules for this! Go crazy, get some sprinkles, edible sugar, cinnamon candy, you name it – it’s fair game!
